In 1638, a French lady combined sugar and barley water while experimenting with medicinal remedies. When sugar from the West Indies plantations became available to the working class families in the U.K. It depended on what was in season to flavour their boiled sweets. That is how Barley, Rhubarb, Limes and all the other crops were used as the flavour.
